Ingredients
- 500g Carrots
- 240ml Milk
- 100g Sugar
- 2 tbsp Ghee
- 1/2 tsp Cardamon Powder
- Handful Chopped Nuts Almonds, Cashews
Method
Step 1: Grate the Carrots
Peel and grate the carrots. You want a fairly fine grate for this, almost the consistency you’d get from zesting an orange. You do not want large chunks as it will taste a bit too veggie.
Step 2: Microwave
In a microwave-safe bowl, mix the grated carrots and milk. Microwave on high for 10 minutes, stirring halfway through. You want to carrots to really soften up.
- This timing is based on a 900w microwave. You’ll need to add 2 minutes to this for lower-wattage microwaves or reduce the time by 2 minutes for higher-wattage microwaves.
Step 3: Add Sugar, Ghee and Cardamon
Add sugar, ghee, and cardamon powder to the bowl. Microwave for another 5 minutes. You may want to stir it halfway through to ensure everything melts and cooks evenly.
- For lower-wattages, add 1 minute to the cooking time here. If you have a higher-wattage microwave, then check it after 4 minutes.
Step 4: Serve
Portion it out into serving bowls before sprinkling with chopped nuts. You could toast these lightly beforehand if you’re happy not using a microwave for one step.
Tweaks
- Add Warmth If you want to add a little more spice and warmth to your carrot halwa, add some grated ginger. Ground ginger would also work well.
- Toast the Nuts If you want to give the nuts a little more flavour then toast them before sprinkling over the top.
- Add Citrus Simply stir some orange, lemon or lime zest into the grated carrot to give it a subtle citrus flavour.
Substitutes
- Tweak the Toppings You don’t have to stick to nuts for the topping. Raisins, pomegranate arils or toasted coconut all work nicely.
- Add Different Sweetness Although not traditional, you can replace the sugar with honey, maple syrup or agave for a different type of sweetness.
Storage
- In the Fridge To store leftover carrot halwa in the fridge, place it in an airtight container to maintain its freshness and prevent it from absorbing other odours for up to 1 week.
- In the Freezer To freeze carrot halwa, let it cool to room temperature, then portion it into desired sizes and place in airtight containers or heavy-duty freezer bags. It can be frozen for up to 3 months.
Tips
Grate Finely: To get the texture right, make sure you grate it as finely as possible. This will allow it to soak up the milk and other flavours you’ll add.
Don’t Undercook It: For This, you want the carrot to almost become mushy. You don’t want raw, grated carrot for pudding!
Allow it to Rest: It might not be a piece of meat but allow it to rest once cooked in the microwave will give the residual heat time to evenly spread through the halwa.
Garnish: Throwing a garnish on the top of the halwa doesn’t have to be pretentious. What it does do, however, is completely hide the fact that you used a microwave!
