Ingredients
- 1 Small Head of Broccoli Cut Into Small Florets
- 1 Red Pepper Finely Chopped
- 4 Large Eggs
- 2 tbsp Milk
- 50g Cheddar Cheese Grated
- Salt
- Black Pepper
- 1 tsp Olive Oil
- Fresh Herbs Like Parsley or Chives to Garnish
Method
Step 1: Microwave Pepper and Broccoli
In a microwave-safe bowl, mix the broccoli and bell pepper. Add a splash of water, cover, and microwave on high for 2-3 minutes until slightly tender. Drain any excess water.
- This timing is based on a 900w microwave. If you have a higher-wattage microwave, cook for 2 minutes. If you have a lower-wattage microwave, cook for 4 minutes.
Step 2: Make Frittata Base
In a separate bowl, beat the eggs with milk, cheese, salt, and pepper. You’re looking for the same sort of mixture you’d get when making a cheese omelette.
Step 3: Combine
Fold the partially cooked veggies into the egg mixture. If the pieces of vegetable are larger, you may want to cut them up a little more. This is down to preference and how chunky you want the frittata to be.
Step 4: Oil Dish
Lightly oil a microwave-safe dish. This is the shape and size your frittata will take so, ideally, find a round deep dish around 15 cm in diameter.
Step 5: Microwave
Pour the egg and veggie mixture into the dish. Microwave on high for 3-4 minutes. Check if the eggs are set; if not, microwave in 30-second intervals until done.
- This is based on a 900w microwave. You’ll need to decrease the cooking time to 3 minutes for higher wattages and increase the cooking time to 5 minutes for lower wattages.
Step 6: Serve
Tip the frittata out of the bowl – you may need to use a spatula to loosen it around the edges. Then sprinkle with your favourite fresh herbs before tucking in.
Tweaks
- Add Spices This is a fairly basic frittata recipe so try including your favourite spices in the mix, such as paprika, cumin or cajun seasoning.
- Grill If you want to mask the fact it was cooked in the microwave, pop it under the grill for a minute to give it a little colour.
Substitutes
- Use Other Veggies This method can be used for any vegetables. You could make the frittata with courgette, cauliflower, onions, garlic or cabbage.
- Try Other Cheese Cheddar is my go-to cheese but other hard cheeses that melt will work just as well. You could even try crumbled feta.
Storage
- In the Fridge To store leftover frittata in the fridge, let it cool to room temperature, then wrap it tightly in cling film or aluminium foil or place it in an airtight container. It will keep for around 4 days.
- In the Freezer To freeze frittata, slice it into portions, wrap each piece individually in cling film or freezer-safe wrap, and then place them in a freezer bag or airtight container for up to 3 months.
Tips
Get a Fluffier Frittata: Beat your eggs with a fork or whisk until they’re completely blended then add a splash of milk or cream to make it fluffier.
Give It Texture: Consider adding ingredients that offer a textural contrast, like toasted nuts, croutons, or crispy bacon bits, after the frittata is cooked.
