Ingredients
- 2 Large Eggs
- 2 tbsp Milk
- Salt and Pepper to Taste
- 1 tbsp Cheddar Cheese Grated
- 1 tbsp Red Pepper Diced
- 1 tbsp Spring Onion Chopped
Method
Step 1: Beat the Eggs
In a microwave-safe bowl or dish, crack 2 large eggs. Add 2 tbsp of milk and a pinch of salt and pepper. Whisk everything together until well combined. You just want to get things combined, don’t over whisk them as this will ruin the texture of your omelette.
Step 2: Add Flavours
Stir in 1 tbsp of grated cheese, 1 tbsp of diced pepper and 1 tbsp of chopped spring onion. Give it a quick stir to fold these ingredients into the eggs.
Step 3: Microwave
Cover the bowl with a microwave-safe cover or plate. You could also use cling film with a small vent. Microwave on high for 1.5 to 2 minutes, checking at 1.5 minutes.
If the egg is not fully set, continue cooking in 15-second increments until done.
- These timings are based on a 900w microwave. You may need to start checking the omelette after 1 minute for higher wattages. It may take over 2 minutes for lower wattages.
Step 4: Enjoy
Carefully remove the bowl from the microwave. Use a fork to check the omelette is cooked through, then gently slide it onto a plate or eat it straight out of the bowl.
Tweaks
- Give It a Tex-Mex Flair Add a tablespoon of salsa, a sprinkle of cumin, and swap cheddar for pepper jack cheese to add a Tex-Mex flair.
- Go Mediterranean Add chopped olives, sundried tomatoes, and feta cheese for a Mediterranean touch.
- Drizzle with Pesto Instantly add flavour by drizzling over a spoonful of garlicky, basil-loaded pesto.
Substitutes
- Make It Creamy Swap milk for a tablespoon of cream or creme fraiche for a richer, creamier texture.
- Go Healthy For a lower cholesterol option, use only egg whites instead of whole eggs. You would need about 4 egg whites to replace 2 whole eggs.
- Swap the Cheese Instead of cheddar, try mozzarella for a milder taste, goat cheese for tanginess or even parmesan for saltiness.
Storage
- In the Fridge Cool the omelette completely, then place it in an airtight container. Store in the fridge for up to 24 hours. Unfortunately, it won’t last much longer than 24 hours.
- In the Freezer Cool completely, wrap tightly in cling film or aluminum foil, then place in a freezer bag. Freeze for up to one month. You cold also freeze it in the bowl but this will take up more room.
Tips
Grease the Dish: Lightly grease your dish to prevent sticking and make clean-up easier. You don’t want to be chiselling omelette off.
Infuse the Milk: Before adding it to the eggs, infuse your milk with flavours like garlic, herbs, or even truffle oil for a few hours in the fridge.
Stir: To ensure the omelette cooks evenly, occasionally pause the microwave and gently stir the outer edges towards the centre, allowing the less cooked mixture from the middle to move outward.
Rest: After cooking, let the omelette rest inside the microwave for a minute or two. The residual heat continues to cook it gently, ensuring it’s cooked through but not rubbery.
